川贝蒸糖梨

Last week, I received a gift from my blogger pal Sherlyn. She has sent me a handy pineapple tart mould and a cookbook filled with delicious dessert recipes. Thank you Sherlyn for your kind thoughts!



I flipped through the cookbook and this steamed pear recipe caught my attention immediately. Due to the hot weather, my elder child was down with a 'heaty' cold(风热感冒)...that is, he started having sore throat, followed by runny nose and soon developed cough. Besides giving him cold tablets, brewing cooling herbal tea, I also drowned him with lots of plain water, chrysanthemum tea and barley water. It will be a nightmare if the cough gets more and more serious as he is prone to wheezing.



This steamed pear with Chuan Bei (川贝) or Fritillaria Bulbs recipe is great for treating cough (热咳) developed from heaty cold (风热感冒). It is not meant to treat cold cough due to 风寒感冒 as chuan bei is very cooling to the body

Coconut Tarts 椰丝塔

With my recent success at baking some really nice egg tarts, I ventured further to try my hands at making Coconut Tarts.



For the coconut fillings, I followed the coconut tarts recipe from Angie's Recipes. Angie's comprehensive list of recipes was my first to go list when I started baking eight years ago :) As for the pastry crust, I am sticking to the 黑妈妈祖传蛋挞 egg tart recipe which I am now very familiar with.



I had problem removing the tarts from the moulds on my first two attempts at making egg tarts. Despite having greased the moulds before using, I had to use a spoon to knock the base of the moulds before the tarts could be released.

Thanks to Angel's kind advice and useful tip, on my 3rd attempt, I did not grease the moulds, and strange enough I could remove the tarts easily! I have always thought that greasing baking pans and moulds helps prevent bakes from sticking, but obviously it doesn't apply for those egg tarts. By the time I tried baking these coconut tarts,…

Half-Iced Half-Birthday Cake

I know, I know, half birthdays are not a real thing. But with these two monkeys in my life, I really embrace any chance to make a cake and have a party.

We've done some pretty fun Half-Birthday Cakes around here the last couple of years.

See, my guys are twins. They share a birthday and a birthday party, so I don't see anything wrong with making a Half-Birthday Half-Cake and celebrating in the spring.

This year, though, we had a lot going on with a sick kid, Easter, the usual... so I just half-iced it.

The cakes were some leftovers from the freezer, and the icing job took me maybe 30 minutes. So, if you're looking for a simple, silly way to celebrate... give it a chance!!

My family loves Korean food. Although I am not much of a good cook, I will try my best to replicate authentic Korean dishes at home.



Today, I am sharing with you this easy spicy chicken stew known as Dakdoritang or Dakbokkeumtang in Korean. I have been cooking this regularly as it has now become my favourite one-pot meal...delicious and yet easy to put together. Most importantly, I can always prepare this earlier in the afternoon at a much leisurely pace than having to wok up 3 dishes during the evening rush hour. It makes home cooking a much fun activity for me to 'enjoy'...of course, minus the washing, cleaning, mopping and putting every single utensils and cutlery back to where they belong, single handedly.

Triple Chocolate Ice Cream Cake {Recipe}

My sweet little boy got his tonsils and adenoids removed the week before Easter.
So, I decided I would try to make it a little easier for him to enjoy the Easter goodies by making an ice cream cake.
(I did not, however, get great pictures of the finished product because of the recovering child, and a family that was rather eager to dig in!)

I'd never made one before, and I have to say, even though it wasn't exactly easy or quick, it wasn't really hard either. It just takes some pre-planning. In order to get everything ready, you need to plan to get the pieces in the freezer at least a day ahead of time.


What You Need:

Chocolate Cake (homemade or from a mix)
Chocolate Ice Cream (homemade or store bought)
Chocolate Fudge Sauce (homemade or store bought)
Whipped Cream Frosting
Toppings:
 Go nuts! Sprinkles, crushed up candy, mini chocolate chips, crushed Oreos, fresh fruit, etc.

pizza in a cuppa

I don't know what has got into me when I googled using the key words 'pizza muffins'.



I have some left over cheese, ham and pineapples after making a seafood pizza and a hawaiian pizza. Not knowing what to do with the leftover ingredients, I surfed the net for recipe ideas. Nothing much inspires me when I searched using the words such as 'ham and pineapple'. A silly thought suddenly came to my mind and I typed 'pizza muffins' in the search box. I wasn't expecting anything at all...but to my surprise, pizza muffins is actually nothing new!



It took me no time to decide on this Hawaiian pizza muffins by Donna Hay since I have most of the ingredients on hand. I halved the recipe and adapted it slightly as I needed to substitute a couple of the ingredients.



These delicious savoury muffins smell just like pizzas when they are baking in the oven! They are great for afternoon snacks and certainly a great way to use up any left over pizza ingredients :)
